just wondering what people actually use of all the NEW things added in 3.6

None, but only because I don't use 3.6.
If I upgrade I expect multi-quote will be used, sig permissions and super mod permissions will be used (currently using a plugin for both). I won't change anything to the captcha untill I actually need it. Thumbnail previews without dimensions, so no change there either. And I won't use the auto thread-redirect removal. I don't use enough redirects to need that.
The infraction system will be left alone, same for the RSS one. Won't be using the podcasting either. Will be using "Image Verification for Guest Posting" which looks like it will be one of the few :)
I really wish that vBulletin would have FINALLY added the ability to have usergroups as moderators.

apparently from reading auto thread redirect removal was removed in the last RC of 3.6 for some reason. so, I'm using a 3.5 product to do it for me once again.

I work in the script and on add-ons more than "use" the operations.

Multi-quote is great. :)
I still can't get my forum members to use it, though. ;) They prefer writing 3 replies instead of just one, but that's fine... :) It's a nice feature, and they will get used to it with time. :)
It's not too common in other forum-softwares, so it takes some getting-used-to.

I use most of them also.
But really love multi-quote.
Although I must admit, it took me a little while to actually use it, but now I know how to, I use it quite a bit.
